Cauliflower is pretty much a superfood- it contains almost every vitamin and mineral your body needs. Additionally, it’s high in choline, sulforaphane, and plenty of other antioxidants. Cauliflower even promotes weight loss! Bananas improve digestion, aid weight loss, moderate healthy blood sugar levels, and improve kidney health. So long story short, this recipe comes packed with some powerful nutrients!
Don’t let the cauliflower make you think it will throw off the fruity flavor of this vegan strawberry smoothie bowl recipe. The cauliflower is going to soak in the sweetness of the bananas, strawberries, and any additional fresh fruit you want to add! The cauliflower simply provides a more creamy texture to the smoothie bowl. Since the cauliflower will disperse rather evenly throughout the bowl, you will not have to use as much fruit as you would think to taste the flavors of the fruit. The measurements of fruit used in this recipe are proportionate to the cauliflower, which also keeps the calorie and sugar counts low.
Vegan protein powder not only provides a great source of protein, but it also aids in keeping you feeling full on fewer calories which is important if you’re trying to avoid unnecessary snacking or caving to those convenience food cravings. Strawberry Sunshine Bowl
- 1/2 cup Frozen Cauliflower
- 1 cup Frozen Strawberries
- 1 heaped cup Frozen Bananas (1 Large Banana)
- 1 scoop Vegan Protein Powder of Choice (I use Vega protein powder)
- 2 cups soy milk (or other plant-based milk)
- 1 cup Fresh Fruit of Choice
- Freeze the cauliflower and banana the night before. Make sure to peel the banana and slice it into pieces before freezing.
- Place all ingredients into a blender and blend until smooth, add a little extra milk if required.
- Pour into two bowls and top with 1⁄2 cup fresh fruit each and add 1 tablespoon of nuts or granola if desired.
